Classes
Oliver's Kitchen Culinary Skills Training Program
is a 12-week course offered Mondays through Fridays from 9 a.m.
to 3:30 p.m.
Class schudule for 2007 is as follows:
- Start: October 6, 2008 Final Exam: October 15, 2008
- Start: January 5, 2009 Final Exam: January 14, 2009
- Start: April 6, 2009 Final Exam: April 15, 2009
- Start: July 6, 2009 Final Exam: July 15, 2009
- Start: October 5, 2009 Final Exam: October 14, 2009
As part of their program, students undergo training
in food handling and sanitation. Students who successfully complete
the classroom instruction and a state sponsored examination receive
state and city certification for a five-year term. Those who do
not pass the exam may repeat it twice within six months of the exam
date and must pay a retest fee of $55.
Areas of competency are graded to indicate employment
readiness as described below:
- Competency in Food Prep (50%)
- Personal Management & Group Effectiveness (10%)
- Personal Hygiene (10%)
- Sanitation Exam (10%)
- Homework and Quizzes (10%)
- Final Cooking Exam (10%)
Diplomas are awarded to students who complete the
course of hands-on culinary training and sanitation training to
the satisfaction of the Chef Instructor and Training Institute Director.
In addition, graduates receive the following certificates
and awards:
- State of Illinois Department of Public Health food service
sanitation license (graduate pays application fee).
- City of Chicago Department of Health food service manager
certificate.
- ServSafe certificate from the Educational Foundation of the
National Restaurant Association.
- Certificate of completion from the Chicago Anti-Hunger Federation
Training Institute.
- 33.0 culinary continuing education units
- Illinois Restaurant Association's skill standards letter.
